Cooking Instructions
Bring the oil and egg to room temperature. Place 1/4 cup of oil plus the egg, salt, mustard, cayenne, and sugar into food processor or blender. Blend until thoroughly combined. While processor is running, add 1/2 cup of oil in a very thin stream. Add teh lemon juice and blend briefly until combined. Add the final 1/2 cup of oil in a fine stream. Refrigerate.

Variations: 2 cloves garlic, crushed; 1 tsp dried tarragon or dill; extra cayenne; substitute vinegar for the lemon juice. For a fish sauce use orange juice instead of lemon and add 1 tsp paprika. For a low-fat mayonnaise, blend fifty-fifty with low-fat yogurt.
