Cooking Instructions
Preheat oven to 350. Grease muffin tins with canola oil. Mix dry ingredients thoroughly (including optional dried fruit). In a separate bowl, beat together milk,, egg, molasses, and canola oil. Add liquid ingredients to dry ingredients, and stir with a few deft strokes. (The more you stir the muffin batter, the tougher the muffins will be. Muffins contain the ideal ratio of flour to water to develop gluten.) Spoon into muffin tins and bake 18-20 minutes or until done.
